As far as the quick bar is concerned, it's really not designed as a game for players to utilize more then a single potion type per combat that you set up before hand. While it is possible to do so, it also means you far less in the world dealing with what's happening to you. But I think that's part of the design philosophy of trying to keep things as simple as possible for every kind of player.
I've heard time and again, over and over, how players feel that they are forced to constantly do this or that in order to get to play in a way that is closer to what other MMO's offer. And to all of them I say stop trying to make this into one of those other mmos and take the game play as it's designed. See what you can do within the confines of the system instead of trying to bypass the design.
